Because they know how to mind their own dang business and unlike these nasty flying insects they don't come around trying to bite you and bite you and bite you. I also like CRANE flies, when one gets in my house I always try to save it and put it outside, because they are aerial predators that hunt and eat the nasty old biters. Flies see this water and drink from it almost every time they land on your skin. They need the moisture to disolve the food solids they injested earlier (again, think poop). Now suppose they land on some dry poop or dry food on your plate. Flies have the ability to vomit their previous mixture of liquid poop to aid in disolving the dry food in order to injest it into thier bodies. That's really about it.
